REVEALED: Ben & Jerry’s Secret Edible Cookie Dough Recipe

Somehow amid the chaos of lockdown and pressing pandemic issues, global ice-cream franchise Ben & Jerry’s quietly and unceremoniously unveiled the secret recipe for their edible cookie dough. It’s the very same dough featured in the B&J favourite Cookie Dough ice-cream, and features just seven ingredients: butter, brown sugar, heavy cream, vanilla extract, salt, flour and chocolate chips. But better still, for those who’ve ever wondered how Ben & Jerry’s make their ‘raw’ dough safe for consumption, they’ve revealed the answer to that as well.

The recipe is just 7 ingredients, and it only takes about 15 minutes to make it. You probably have most of these ingredients on hand already. And it’s totally safe to eat as you heat treat the flour beforehand.

“We get it, it’s tempting to sneak a scoop of your regular chocolate chip cookie dough recipe before it heads into the oven. But even your inner cookie-stealing kid knows that it’s not safe,” they write on the website. So how do they make their cookie dough “100% safely snackable” without being cooked? They put it down to two factors: “making an eggless cookie dough”, and “not forgetting to heat treat flour for the recipe”.the company wrote on its website before revealing the secret recipe. The easiest way to heat treat flour, they explain, is by simply microwaving the flour on high until it reaches 74°C, which you can check by using an instant-read cooking thermometer before adding to the rest of your dough mixture.

Okay, enough talking — we’re ready to start snacking! Let’s get to the recipe.

 

INGREDIENTS YOU’LL NEED

If you don’t already have them on hand, you can get all of the ingredients you’ll need delivered straight to your home with 

  • 8 tbsp. unsalted butter (1 stick), room temperature
  • 1 cup brown sugar, packed
  • 2 tbsp. heavy cream
  • 1 tsp. vanilla extract
  • ½ tsp. kosher salt
  • 1 cup flour
  •  ½ cup chocolate chips

 

METHOD

  • Gather all your ingredients./li>
  • First, heat treat the flour to ensure it is safe to eat. Do not skip this step, untreated flour can contain contaminants and is not safe to eat. Place the flour in a microwave safe bowl and microwave on high in 30-second intervals, stirring in between. Use an instant-read thermometer to ensure that the flour reaches 165°F throughout.
  • Using a stand mixer or hand mixer, beat together butter and sugar until “light and fluffy”.
  • Add vanilla, cream, and salt, and mix to combine.
  • Add the heat-treated flour and mix to combine.
  • Fold in the chocolate chips.
  • Serve and enjoy! Store in an airtight container in the refrigerator.
